1 cup water
1 cup uncooked rice
1 tablespoon reduced fat butter or margarine
1 teaspoon chicken bouillon granules
1 (10 ounce) package frozen chopped spinach, thawed and drained
of all water
1 tablespoon fresh lemon juice
3/4 pound cooked shrimp
Salt and pepper to taste
In large (2 quart) microwave proof casserole combine water, rice
and butter. Stir in bouillon granules until dissolved. Microwave
covered on HIGH for 4 minutes. Add spinach and microwave covered
on HIGH for another 5 minutes. Remove from microwave, uncover,
and stir in lemon juice, shrimp, salt, and pepper. Heat on HIGH
for an additional 2 minutes or until shrimp is heated through.
